with Three Marks – Brazil Santa Clara
There are few things that make for such a lovely start to the day as a good cup of coffee. Recently I discovered a new blend through BAM Coffee, called Santa Clara Brazil, and I have to say, it was love at first sight (or sip, really).
The Santa Clara Brazil blend offers a rich, full flavour with notes of chocolate, nuts and a subtle hint of vanilla. It has a velvety finish that strikes the perfect balance between sweet and bitter. It's like having a little piece of Brazil in your cup.
Inspired by the vanilla notes in this wonderful coffee, I decided to make a delicious oatmeal breakfast that would complement these flavours. This recipe, which I've called "Vanilla Espresso Overnight Oats", is perfect for starting your morning.
Recipe for Vanilla Espresso Overnight Oats
Ingredients
- 2 tablespoons brown sugar
- 1 cup rolled oats
- 1 tablespoon chia seeds
- Pinch of salt
- ¼ cup cold espresso (Three Marks – Santa Clara Brazil)
- 1 cup unsweetened almond milk
Instructions
- Add the brown sugar, oats, chia seeds and salt to a glass jar and stir the ingredients together.
- Pour the espresso (which I made with my Bialetti) and almond milk over the oats and mix until everything is well combined.
- Cover the container and refrigerate the oats for at least 2 hours or overnight.
