Selmira Ruiz farms one hectare in La Perdiz, San Agustín, in the south of Huila. Clay soil with volcanic influence and steady rainfall let the cherries ripen slowly. Picking is selective at peak ripeness, followed by about 48 hours of fermentation and fifteen days of slow drying.
